Deliciously Simple No-Bake Kids' Cookies (Nut & Dairy-Free!)
12-15 cookies Prep Time: 15 minutes Chill Time: 30 minutes
Ingredients:
- 250g (1 cup) of a nut-free butter (we used Biona Organic Pumpkin Seed Butter)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups gluten-free rolled oats
- 1/2 cup dairy-free chocolate chips
Optional Toppings:
- Sprinkles (dairy-free)
- Shredded coconut
- Dried cranberries or raisins
Instructions:
-
Get Mixing: In a large mixing bowl, combine the seed butter, maple syrup, and vanilla extract. Use a sturdy spoon or a hand mixer on low speed to mix until everything is smooth and well combined.
-
Add the Dry Ingredients: Gradually stir in the rolled oats and dairy-free chocolate chips. Mix until the oats are evenly coated and everything is sticking together. The mixture should be thick and easy to form into balls.
-
Form the Cookies: Scoop up a tablespoon of the mixture and roll it into a ball with your hands. Place the ball on a parchment-lined baking sheet.
-
Flatten and Decorate: Use the bottom of a glass or a spatula to gently flatten each ball into a cookie shape. Now for the fun part! Let the kids go wild with the optional toppings. Press sprinkles, shredded coconut, or seeds onto the top of each cookie.
-
Let Them Chill: Pop the baking sheet into the refrigerator for at least 30 minutes to let the cookies firm up. This is a great time to clean up and get ready for a delicious snack!
-
Enjoy! Once the cookies are firm, they're ready to eat! Store any leftovers in an airtight container in the refrigerator for up to a week.
This recipe is a fantastic way to teach kids about simple measurements and following instructions, all while creating a yummy treat they'll be proud of. Happy no-baking!
